I traveled in the countryside in search of the finest purveyors of Piedmont beef, or as they refer to it as the real veal. I have not the time to explain it, but I thought I would share this photo of Giancarlo, an excellent butcher that serves clients with the finest. His meats are truly superb and in a region where meat is often consumed raw, they are truly fantastic.
