Cesare has been a friend for almost twenty years and I am never disappointed by his cooking, friendship or hospitality. I arrived unannounced yesterday and we immediately fell into discussion as if we had seen each other a few days before. We had lengthy discussions these past days surrounding cuisine and his technique.
He deploys traditional technique, the art of Piedmontese cuisine in every way. His natural instincts in the kitchen and 40 years of experience are obvious. The raw materials he uses are wonderful, fragrant and are all regional.
Open a few days a week, Cesare has reduced his staff to a minimum so he can have the maximum flexibility. I stand with him during service (assisting as needed) and observe his very small details. He is truly a wonderful artist in the kitchen and it shows with his handful of secrets.
