Sheridan Block 1 – 2009

The wine is opened, we taste it, and a lab chef suggests aeration of the wine with the help of a Vita Prep. I say no, but then I say yes. The wines are poured into two glasses blind as I am challenged, and I get it right. The aeration wine is less interesting and has lost some obvious character.

This wine has ripe rich fruit yet, it is structured and was a very good recommendation. I really enjoyed this wine with smoked corn-beef, brine’d, smoked 10 hours and then maintained under sous vides and heated to perfection: say bye-bye to Katz Deli and forget about  in Toronto! (94+ Points)
