This is What is going on in this photo except confusion and fusion. This is when a chef tries too hard it becomes obvious. The Alajmo brothers are excellent technicians but sometimes even a three star gets it wrong. In fact, the cuisine at the three star restaurant is just too much. It is over the top and you can see why classical chefs, such as Mr. Joel Robuchon does not waste his time with trying to re-invent dishes.
