Fugu Shirako


There is nothing more special that the Shirako of a fugu fish: Shirako is the testis sacs of male fugu fish. It’s often prepared by cooking it over sumi-bincho (black Japanese charcoal) and the interior white milk of the sac is neutral yet savory and sweet with no fishy taste whatsoever. The texture is unique as the center is steaming hot and exterior sac remains in contact (dry) until you pierce it at a much lower temperature. The milk of the testis loosens up into a soft jelly like liquid and is one of those very rare Japanese delicacies to share with special friends. The size of this Shirako was almost 20cm and that it is all about size.
