I am just blown away and I’ve seen many tuna blocks in my career. This block is top in the market no doubt, a center cut from the belly it doesn’t get better.
Already having finished lunch, I was ready to leave and the chef asks, “you want to try”, in his broken English. I wasn’t sure what he meant, so I paused in a polite Japanese way, I said in my mind, “its okay” being polite and declining his offer. But then blurted out “yes, yes” almost shouting, and the chef laughed and nodded okay.
