The foods in Siberia are all about the territory and whatever they find is introduced into the repertoire of foods. Local raw materials are always a priority for obvious reasons, and moving supplies to and from locations is difficult. The fish is fresh water and is a member of the salmon family, tender and sweet is smoked.



This greyling is dried by this fisherman, he hangs it on his porch in a sunny place to it rest for part of the day in the shade. The fish is not smoked and is not fermented but is similar to sashimi and is chewy in texture.
