Gray Cheese Sud Tyrol

The “Gray Cheese” is a South Tyrolean speciality which can be prepared preferably with onions, olive oil, some pepper and salt. The Gray Cheese is a very strong sour milk cheese with low fat.

For cheese lovers, most if not 99% of cheese are made with rennet and for those of you who are unfamiliar with cheese making that is unsuitable for vegetarians.

Rennet is an extract from the fourth stomach of ruminants; cows, goats, and sheep and contains a number of enzymes that are designed to help these animals digest their mother’s milk, and when added to milk, it will cause the milk to coagulate, forming the curds and whey that are so essential in the cheesemaking process.

But this cheese is produced without the use of rennet and is suitable for vegetarians, it is a low-fat sour milk cheese, made in a natural way, the colour is pale yellow, brownish and even grey. The cheese gets no rind, with progressive maturation it gains flavour.
